Ingredients

  • 2 sachets of Hartley’s Jelly, 2x11,5g, 23g
  • 500 ml natural yoghurt
  • 400 ml water

For decorating

  • Fresh raspberries
  • Fresh strawberries, sliced
  • Frozen blueberries, lightly mashed
  • Mint leaves
  • icing sugar, for dusting

Let’s start with making our Jelly.

Boil half of the water and dissolve the jelly powder in it.

Add the other half of cold water to help it cool faster.

Leave the jelly mixture at room temperature to cool down, but watch out not to let it set.

Once the jelly has cooled, use an electric mixer to begin mixing.

Gradually add in the natural yoghurt while mixing.

Continue mixing for about 10 minutes until the mixture becomes light and foamy.

The more aerated, the more delicate the dessert will be.

Prepare serving dishes, around 100 ml capacity each, or any size you prefer.

Pour your mixture into the dishes.

I ended up with 14 servings, but the final number may vary depending on the size of your dishes.

Pour the foamy mixture evenly into each one.

Chill the dishes in the refrigerator for at least 2 hours, or until fully set.

Take them out of the fridge and decorate with fresh raspberries, strawberries or blueberries as you like.

Add a final touch with a few mint leaves.

Just before serving, lightly dust with icing sugar.
