Ingredients
Dough
- 350g of strong white flour
- 2 tsp of dried yeast
- 1 tbsp of maple syrup alternative
- 1 tsp of salt
- 1 cup of warm water
Sauce
- 200g chopped tomatoes
- 1 crushed fresh garlic cloves
- pinch of salt
- pinch of black pepper
- 1 tbsp of sugar
- pinch of chilli powder
Topping
- 100g of mozzarella alternative
- 100g of grated mozzarella cheese
- 50g of black olives
- 1 small red onion
- ½ red pepper
- 8 slices of salami
- fresh oregano
- 3 medium mushrooms
Method
First, let’s make the dough.
Pour the warm water into the large bowl and add yeast, maple syrup and a spoon of flour and salt. Combine using a hand whisk and leave for 2 minutes.
Gradually add flour and stir until the mixture is too thick for a hand whisk.
Using a hand, fold the rest of the flour and continue kneading for further few minutes, until smooth and elastic.
When the dough is well-kneaded, soft and not sticky to the hands, put it into a bowl greased with the oil. Then cover with a cling film and place in a warm place for an hour to double in size.
After an hour, divide the dough into two equal parts.
Knead, by folding the dough to the bottom, for a few minutes each. It should not require adding the flour, but if the dough is sticky to the hands then add some.
When the dough is ready, cover it once again with a cling film and leave it again in a warm place for another hour, until rises again.
Between times, make the tomato sauce.
Tip chopped tomatoes with all spices into a pan and cook at medium heat for 5 minutes. You can blend it if you want it smooth.
Prepare toppings.
Cut olives, onion, pepper, mushrooms and mozzarella into the pieces you desire. Slice mozzarella.
Preheat the oven to 250C.
Lift the dough onto a baking sheet and form the pizza base by stretching and tapping the dough with your hands.
Two medium-sized pizzas will come out of the ingredients used.
When the bases are nicely formed, spread a little tomato sauce over each pizza base and top with toppings.
Bake the pizzas on the lower shelf in the oven for 10-12 minutes until crisp and golden brown around the edges and the cheese top has melted.
Bon Appétit.
