Nut-Free Homemade Granola

I am allergic to nuts, so I created this recipe for homemade nut-free granola. It is a perfect addition to breakfast or a healthy snack.

Ingredients
- 6 tbsp Honey
- 4 tbsp oil
- 1tsp of cinnamon ground
- 300g rolled oats
- 30g sunflower seeds
- 30g pumpkin seeds
- 30g coconut
- 130g dried mixed fruits (raisins, cranberries, apricots, lemon and orange peel, currants)
Method
Preheat the oven to 160C. Line the baking tray with baking paper.
In a small bowl combine oil together with honey.
In a large mixing bowl place oats and pour the oil-honey mixture, add cinnamon and mix all together.
Add sunflower and pumpkin seeds then mix together.
Dried mixed fruit and coconut leave for later.
Tip into the baking tray.
Bake for 15 minutes stirring a few times through baking time to avoid burning and to maintain loose consistency.
Remove from the oven and add coconut and dried fruit. Mix all together and continue baking for further 10 minutes stirring from time to time.
Take it out from the oven and let cool completely.
Break the structure and make granola crumbles.
Transfer into an airtight container or a glass jar.
Serve with milk or yoghurt for your breakfast or snack.
Once fully cooled down store in an airtight container. It will stay fresh for up to a month.
Be careful when purchasing seeds and dried fruits. Check that they have been made in a nut-free factory.
