Oven-baked salmon in tomato sauce is a quick and easy dish that is perfect for a weeknight meal. The salmon is baked in a flavourful tomato sauce with herbs and spices, and it is served with mixed salad with spinach, potatoes and broccoli.

Ingredients
- 4 salmon fillets, approx. 400g
- 1 tin of chopped tomatoes, 400g
- 1 tsp salt
- 1 tsp black pepper
- 4 garlic cloves
- 1 tsp dried oregano
For serving
- 12 broccoli florets, boiled
- 16 new potatoes, boiled
For garnish
- a pinch of parsley, freshly chopped
- a handful of mixed leaves salad with spinach, for visual effect
Method
Preheat oven to 180 degrees C.
In a medium bowl, combine tomatoes, salt, pepper, oregano, and garlic. Blend all together with a hand blender.
Salmonplaced in an ovenproof baking dish and covered with tomato sauce just before baking
Place the salmon fillet in the baking dish and cover it with the tomato sauce.
Bake, uncovered, for 20-25 minutes, or until salmon is cooked through.
Meanwhile, bring a large pot of salted water to a boil. Add potatoes and cook for 10-15 minutes, or until tender. Drain.
In a separate pot of boiling salted water, cook broccoli for 3 minutes, or until tender-crisp. Drain.
Baked salmon taken out straight from the oven and sprinkled with freshly chopped parsley
Scatter chopped parsley on top of the salmon and take a piece and put it on a plate.
Serve with potatoes, broccoli and mixed leaves salad with spinach on a side.
