Ingredients #
- 100g of glass noodles
- 1 tsp of dried ginger
- 2 chicken breasts
- 2 tbsp of soy sauce alternative
- 2 spring onions
- 1 red pepper
- 1 green pepper
- 1 small green chilli
- a handful of fresh coriander
- 1 lime for juice
- oil, for greasing
Method #
Wash all your vegetables.
De-seed peppers and chop them finely.
Slice green chilli into thin pieces.
Cut the green part of the spring onion and chop the coriander.
Wash and cut the chicken into fine shreds.
Heat the oil in a frying pan. Place the chicken, season with dried ginger and fry over medium-high heat for about 5 minutes until golden brown and well cooked.
Stirring occasionally pours soy sauce and fry for a minute.
Put the noodles into the pan and pour boiling water over them. Cover with a lid and leave for 5 minutes. Drain and trim for a shorter length.
Put the noodles into a large bowl and chicken on top. Add the rest of the ingredients and toss them together.
Squeeze the lime and use a spoon to mix it thoroughly.
Keep refrigerated until served.
