Simple Crêpes

Here is a quick and easy recipe for thin and simple Polish crepes (naleśniki). They are perfect for any occasion, whether you serve them for breakfast, lunch, or dinner.

Ingredients
- ½ cup of lukewarm water
- 1 cup of milk
- 4 large eggs
- 4 tbsp of butter, melted
- 4 tbsp of oil
- 1 cup of all-purpose flour
- 2 tbsp of sugar
- pinch of salt
Method
Gather all the ingredients.
Put the eggs into a jug or large mixing bowl, add salt, sugar, oil, butter, milk and water and blend it all using an electric hand blender or mix on fast speed using a hand mixer.
Gradually add the flour and blend thoroughly so that there are no lumps.
Let the pancake dough rest (at room temperature) for 30 minutes so liquid can be absorbed by the flour.
Heat the crêpe pan over medium heat (induction hob-set 7) and lightly coat it with melted butter or oil.
Pour a portion of pancake mix using a ladle in a circular motion, tilting the pan so that the dough is spread over its entire surface.
Fry until the top of the pancake is solid, then, using a spatula, flip over. Fry for a moment until the bottom is light brown.
Remove crêpe from the pan and repeat with the remaining batter.
Tips
You may not need to coat the pan with butter one more time as you cook more crêpes.
Once you have finished frying pancakes, serve as you desired.
Can be served drizzled with honey, maple syrup or any other sauces you like.
