Breaded Pork Loins with Mushrooms and Grated Mozzarella

Ingredients
- 4 boneless pork loins
- 1 egg
- ⅓ cup of milk
- a bowl of breadcrumbs
- 1 tsp of salt
- 1 tsp of black pepper
- oil
- 200g mushrooms
- 1 tsp of dried garlic
- 150g of grated mozzarella cheese alternative
Method
Place the pork loins on the chopping board and season with salt and pepper.
Cover with cling film and beat with a meat tenderizer.
In a small bowl whisk an egg with milk. Dip pork loins into the egg mixture and coat with crumbs.
In a pan heat the oil over medium-high heat. Add a pinch of salt to the oil to avoid oil splash. Fry pork loins on both sides until golden (around 4 minutes on each side).
Place pork lions into a baking tray lined with baking parchment.
Cut mushrooms into pieces. Heat a spoonful of oil in a pan. In the meantime preheat the oven to 220C.
Place mushrooms in the pan and season them with salt, pepper and dried garlic. Sizzle for a few minutes.
Put mushrooms evenly on each pork loin and cover with grated mozzarella cheese.
Put into the oven for about 10 minutes until the cheese melts.
Serve with mashed potatoes and any vegetable you like.
